Herb and Olive Oil Butter

Use herbs and flavouring of your choice. I have used basil simply because I have a plant needing to be utilised and I love basil!
- 250g Butter
- ¼ cup Fresh basil leaves (more or less depending on how strong you want your flavours)
- 2-3 tbsp Olive Oil
- Soften butter at room temperature. Please basil and olive oil in the blender and blend until well combined. Mix basil mixture well with softened butter, shape into a log and wrap firmly in cling wrap. Refrigerate until solid. Herb butter can be stored for several weeks in the fridge. Before serving, slice into rounds. Serve as a condiment on steak or add extra flavour to a roast chicken meal by placing 2-3 pieces under the skin of chicken before roasting.
