Herb and Olive Oil Butter
Use herbs and flavouring of your choice. I have used basil simply because I have a plant needing to be utilised and I love basil!

  • 250g Butter
  • ¼ cup Fresh basil leaves (more or less depending on how strong you want your flavours)
  • 2-3 tbsp Olive Oil
  1. Soften butter at room temperature. Please basil and olive oil in the blender and blend until well combined. Mix basil mixture well with softened butter, shape into a log and wrap firmly in cling wrap. Refrigerate until solid. Herb butter can be stored for several weeks in the fridge. Before serving, slice into rounds. Serve as a condiment on steak or add extra flavour to a roast chicken meal by placing 2-3 pieces under the skin of chicken before roasting.
