What to do with left over Cauliflower Mash? Cauliflower hummus of course!! Note that I have calculated nutrition information on this recipe shared by six people, as a dip rather than the amount you might consume as a whole serving.
Ingredients
- 1½ cups Cauliflower mash
- 2 Garlic cloves
- ¼ cup Almonds (raw)
- 4 tbsp Olive oil
- 2 tbsp Apple cider vinegar
- 2 tbsp Lemon or lime juice
- Salt and black pepper to taste
Instructions
- If you are making cauliflower mash from scratch, follow instructions in the Cauliflower Mash recipe on this site and cool in the fridge. Place garlic, almonds, oil, vinegar and lemon juice in the blender and blend to a paste (not entirely smooth, you do want some texture from the almonds). Mix paste with Cauliflower Mash and leave for several hours (if you have the time) to allow flavours to blend together. Serve warm or cold on a platter with raw veges, toasted Low Carb Muffins, or Seed Crackers.
