Low Carb Pizza

  • 2 cups Mozzarella cheese
  • 3 tbsp Cream cheese
  • 1 Egg
  • 1 cup Almond meal (keep a little extra on hand in case the mixture is too soft)
  • 2 tbsp Psyllium husks (optional)
  • Salt and pepper
  • Topping
  • 2 tbsp Tomato paste
  • 2 tbsp Herb Paste (optional)
  • 2 Tomatoes sliced
  • 1 Red onion (small) finely sliced
  • ¼ cup Coriander
  • ½ cup Cheese grated
  1. Melt Mozarella and cream cheese until just softened (microwave for 1 minute), add egg and mix well. Add almond meal and psyllium husk, salt and pepper and mix until ingredients are well combined. Roll mixture onto a paper lined tray until flat about 3 mm thick. Spread tomato paste and herb paste across pizza base, then add tomato, onion and coriander. Top with grated cheese. Place in oven at 180 degrees (fan bake) for around 20 minutes or until the base is cooked and pizza is browned on top.
