Easy Lamb Curry

Ingredients
  • 2 tbsp Coconut oil
  • 1 tbsp Cumin, coriander, and/or Italian herbs
  • 400gm Lamb fillets (cubed)
  • 1 Onion (medium)
  • 2 tbsp Herb Paste, Fresh Curry Paste (recipes available in Dips and Dressings section of website), or commercial curry paste
  • 1 cup Coconut cream
  • 2 cups Vegetables sliced (spinach, brocoli, capsicum etc)
  • ¼ cup fresh Coriander (or fresh herb of your choice)
Instructions
  1. Heat coconut oil, add dried herbs and cook until herbs are heated through and the releasing a strong aroma ( dried herbs need to be heated enough to release flavours). Add cubed lamb fillets and curry paste and cook until browned and cooked though. Add coconut cream and cook for a further 5 - 10 minutes. Add vegetables and fresh herbs. Serve with Cauliflower Rice.
