Slow Cooked Lamb Shanks
A 'falling off the bone' lamb dish. Keep the bones to add to your weekly Bone Broth

  • 4 Lamb shanks
  • ½ cup Red wine
  • 6 Garlic cloves
  • 1 can Tomatoes
  • 1 tbsp Italian Herbs
  • 1 onion
  • 4 Shallots
  • 1 small Zucchini
  • 1 Button mushrooms
  • Salt and pepper
  • ½ cup Cream
  1. Place shanks, wine, Italian herbs, onion, garlic, and tomatoes in the slow cooker on 'low' for around 8 hours. After 7 hours add mushroom, zucchini, and shallots and leave to simmer for the final hour. Before serving , add cream, salt and pepper to taste. At this stage taste it and flavour to your own taste if needed. Serve with Cauliflower Mash, however this dish is quite satisfying on it's own!! Note that if there are any left overs, you will have a spectacular lunch/brunch tomorrow!
