Low Carb Meringues
 
 
While not as crunchy as a traditional meringue, this is sweet and chewy and divine served with fresh cream and Limon Curd (yes that's lime and lemon curd)

Ingredients
  • 4 Egg whites
  • 2 tbsp Natvia
  • 2 tbsp Vanilla paste
Instructions
  1. Heat oven to 200 degrees C.
  2. Beat egg whites until firm. Gradually add Natvia and vanilla paste. Line an oven tray with grease proof-paper and put large spoonfuls of the meringue mixture onto the tray. Bake for 10 minutes at 200 degrees but reduce the heat to around 100 degrees for remainder of cooking time. Bake a further 20 minutes, turn the oven off and leave to cool in oven.
