Low Carb Muffin
Make these low carb muffins for breakfast, lunch or dinner. These low carb muffins can be toasted or made into a toasted sandwiches. A great low carb alternative when you just feel like eating toast!

  • 5 tbsp Almond meal
  • 1 tbsp Butter
  • 1 tbsp Olive oil
  • 1 Egg
  • ¼ tsp baking powder
  • 1 pinch each of dried ginger and turmeric (optional)
  1. Mix dry ingredients, add melted butter and olive oil. Stir in the egg until mix is quite smooth. Microwave for 1 minute in a 10 cm dish. Cool slightly and remove from dish. Split muffin and toast, or fill with your favourite fillings (cheese, onion, tomato, avocado etc) and toast as you would a toasted sandwich.
  2. Oven baked option: Place muffin/s in the oven (170 C) for around 10 minutes.
