Coconut Fresh Herb Dressing
 
 
This dressing is great on a salad, seafood and chicken and will last for a week in the fridge. The flavours in this dressing get stronger the longer this dressing is left to sit.

Ingredients
  • 1 tsp each chilli, ginger and garlic
  • Juice and rind of 2 limes
  • ½ cup Mint leaves chopped
  • ½ cup Coriander leaves chopped
  • 1 Kaffir lime leaf
  • 1 cup Coconut cream
Instructions
  1. Place all ingredients in a blender and blend until nearly smooth.
