Low Carb Bounty Bars
 
 
These little low carb lovelies won't last long in your fridge - only because they taste so good!!!

Ingredients
  • 1 cup Coconut shredded
  • 1 tsp Vanilla
  • ⅓ cup Coconut cream (the mixture needs to be a little bit wet but not too much)
  • ½ tsp Natvia
  • 4 tbsp Coconut oil
  • 2 tbsp Cocoa powder
  • 1 tsp Vanilla (extra)
  • ⅛ tsp Natvia (optional)
Instructions
  1. Mix coconut , vanilla, coconut cream, and Natvia together. Spread on a sheet of baking paper in a layer 1 - 1.5 cm thick. Alternatively fill ice cube trays with the mixture. Freeze for around 2 hours or until they are frozen solid. Mix together coconut oil, cocoa powder, vanilla and Natvia (optional) until smooth. Pop frozen coconut lumps from the tray or slice your frozen coconut layer into cubes. Dip coconut into chocolate mixture and coat completely. Place on a tray on a layer of glad wrap or baking paper and return to fridge. They will set very quickly and can be eaten immediately or stored in the fridge for several days (if you are lucky!!).
