Cauliflower Mash
A low carb alternative to mashed potato.

  • 1 head of cauliflower
  • 2 tbsp butter
  • ½ cup of milk, coconut milk, or cream
  • Salt and black pepper
  1. Chop cauliflower into chunks, boil until tender. Drain and mix in a blender with butter and either milk, coconut milk, or cream, until smooth and creamy or is the consistency of mashed potato. Add more milk if necessary. Season with salt and black pepper. Serve as aside dish, a topping for low carb pies or as a base for soups and casseroles.
