Fried Cauliflower Rice
A simple, tasty and nourishing extension to Cauliflower Rice.

  • 1 head Cauliflower
  • 1 cup Brocoli flowerets
  • 1 small Onion
  • 2 cup mixed Vegetables- carrot, capsicum, spinach, zucchini, spring onion - finely diced
  • ¼ cup fresh Coriander, parsley, or herb of choice
  • Salt and pepper to taste
  • 2 tbsp Coconut oil
  1. Cut cauliflower and broccoli into pieces and place in the blender and pulse/blend until it resembles rice. Heat coconut oil in a large pan and cook mixed vegetables until just cooked, add cauliflower and broccoli and cook on a low heat until cauliflower has softened and is heated through, add fresh herbs and cook for another minute. Serve immediately.
